Where to set this

Patient → Settings tab → scroll to Visible tabs and Visible cards.

Defaults for the whole organization are set under Layout customization (Admins and Members can edit; Viewers are read-only). The Patient → Settings tab is a per-patient override on top of those organization defaults.
